If you cant uninstall iTunes from Microsoft store through Windows GUI:

If you cant uninstall iTunes from Microsoft store from windows start menu or settings app (both GUI), you can uninstall it form powershell (as administrator) by:
Get-AppxPackage *itunes* | Remove-AppxPackage
